Ingredients

  • vegetable oil, for deep frying
  • 4 large brown onions, peeled, trimmed, sliced into 1cm (⅜”) thick rings
  • ¾ cup cornflour (cornstarch)
  • Spicy sprinkle:
  • 2 tsp gochugaru*
  • 1 tsp chilli powder
  • ½ tsp black sesame seeds
  • 1 chicken stock cube, crumbled
  • 1 tbsp sea salt
  • BBQ mayo:
  • 3 tbsp whole egg mayonnaise
  • 3 tbsp BBQ sauce
  • Beer batter:
  • 400g (14 oz) plain (all-purpose) flour, put in the freezer for 15 minutes before using
  • 3 tsp baking powder
  • ½ tsp gochugaru
  • ¼ tsp curry powder
  • 320ml (11 fl oz) cold beer
  • 280ml (9.5 fl oz) cold soda water
