• 1 medium onion, chopped
• 1 garlic clove, crushed
• 1 bay leaf
• 1 cup brown or green lentils
• 1 400 g can of chopped tomatoes in juice
• 1 1/2 cups water
• 1 teaspoon salt
• 1 teaspoon thyme
• 1/4 teaspoon black pepper
• 500g chorizo or other flavoursome pre-cooked sausage
• 1 tbsp lemon juice
• small bunch flat leaf parsley, chopped
