Stir-fried Sichuan Pork with Aubergine – Love and Cook
Experience the quick and flavorful Stir-fried Sichuan Pork with Aubergine, a lighter twist on traditional deep-frying. Perfect for a weekday dinner!
Ingredients
- 2 tablespoons groundnut oil (groundnut is preferable but vegetable oil will suffice)
- 1 large aubergine
- 2 cloves garlic cloves (grated or crushed)
- 2" piece fresh ginger (grated)
- 1 fresh red chilli (finely chopped & seeded if you prefer less heat)
- 1 tablespoon Sichuan peppercorns
- 250 g minced pork
- 1 tablespoon shaoxing rice wine (or dry sherry)
- 2-3 spring onions (sliced into 1” lengths. )
- Salt & black pepper (for seasoning)
- spring onion greens (for garnish, thinly sliced)
- 1/2 cup chicken stock (or vegetable, made from powder or cube is fine)
- 1 tablespoon light soy sauce
- 1 tablespoon black rice vinegar (Chingkiang (use balsamic vinegar as a substitute))
- 1 tablespoon cornflour (made into a slurry with a tablespoon of water)
