• 1 Medium carrot, diced or grated
• 1 Stalk celery, finely chopped
• 4 Ounce mushrooms, finely chopped
• 1/2 Medium red onion, finely chopped
• To Taste olive oil
• 3 Pound 80/20 ground beef
• 2 garlic cloves, grated or chopped
• 3 Sprig fresh thyme, leaves only
• 1 Large egg, beaten
• 6 Slices cooked and crumbled bacon
• 2 Teaspoon Worcestershire sauce
• 1 1/2 Teaspoon kosher salt
• 1/2 Teaspoon freshly ground black pepper
• 1 Cup breadcrumbs
• 1/2 Cup condensed tomato soup
• 1 Pound thinly sliced bacon
