Xmas Roast Beef ⋆Anne's Kitchen

Ingredients

• 300g shallots
• 50g butter
• 1 tbsp sunflower oil
• 800g beef fillet
• 3 tbsp horseradish sauce
• 1 bunch of parsley, chopped
• 2 tsp fresh thyme leaves
• 200ml red wine
• 700ml beef stock
• 2 tbsp port wine (optional)
• 2 tbsp redcurrant jelly
• 1 tbsp cornflour
• 8 slices smoked Luxembourg ham
• salt and pepper
