Ingredients: 1c flour; 1c shortening; The Holy Trinity:; 1c diced onions; 1c diced bell peppers (green or whatever colors you like); 1c diced celery; 1 whole chicken sectioned (or about 4 whole chicken breasts chopped up, but the bones give it a nice stock); 1 lb smoked sausage, andouille if you can find, easy in the south; 1 bunch of green onions diced including the whites; 2c cut okra, canned or frozen is fine, do not drain if canned; 5 bay leaves; 1 tbls red pepper flakes; 1 tbls cumin; 1 tbls garlic powder; 1/4c Worcestershire sauce; 1 tsp thyme; 1 tsp sage

This is the gumbo that my dad taught me, that his mom taught him, that… ya you get the picture. No tomatoes! My family would disown me.
