Mahnke Family Recipes- Leek and Goat Cheese Quiche

Ingredients

• 2 medium leeks - cut into 1/2-inch dice (about 2 cups)
• 2 T / 34 g unsalted butter
• 1 large eggs
• 2 large egg yolks
• 3 ⁄ 4 c / 170 g whole milk
• 3 ⁄ 4 c heavy cream
• 1 ⁄ 2 t / 3 g salt
• 1 ⁄ 2 t ground white pepper
• 1 pinch grated nutmeg
• 4 oz / 113 g mild goat cheese - broken into 1/2 inch pieces
• 1 9 inch partially baked pie shell
