• 1 Tablespoon lemon zest (optional)
• 1 teaspoon salt
• 1/2 cup packed light brown sugar
• 1 tablespoon freshly ground black pepper
• 1/8 teaspoon cayenne pepper
• 2 teaspoon freshly minced thyme leaf
• 1 pound thick-cut bacon
• ¼ cup whiskey, bourbon, scoth, rye, etc.
• 1 cup pure maple syrup
