Brown sugar layered pavlova with caramelised peaches

Ingredients

• 2 cups 480 ml heavy cream
• 1 tsp vanilla paste
• 1 cup | 125g icing sugar
• 1½ cups 300g Demerara sugar
• 2 tsp cornstarch
• 3/4 cup | 180ml | 6 egg whites
• 4 large peaches
• 3 tbsp honey
• 2 tbsp butter
• 2 tsp lemon juice
• 1/4 cup | 30ml bourbon
• 1/8 tsp cream of tartar
