Hasselback Haloumi

Ingredients

• 2 tbsp olive oil
• 400 g tin chopped tomatoes
• 3 cloves garlic, minced
• 1 tsp dried oregano
• ½ tsp smoky paprika
• 2 small red chillis, finely chopped, seeds removed
• 1 large red capsicum, finely diced
• Salt and freshly ground black pepper
• 4 x 180 g packs of Lemnos Haloumi Cyprus Style Cheese
• Zest of 1 large lemon
• Handful of flat-leaf parsley, chopped
