• 2 tsp Garlic powder
• 2 tsp Salt
• 2 tsp Ground cumin
• 2 tsp Chili powder
• 2 tsp Ground coriander
• 2 TB Olive oil
• 1 small Lemon, sliced
• 1 small Red bell pepper, thinly sliced
• 1/2 small Yellow onion, chopped
• 2 cups Long-grain white rice
• 1 1/2 cups Water
• 1/2 cup Pitted manzanilla olives
• 2 Plum tomatoes, seeded and chopped
• 3 TB Chopped fresh cilantro
