Ingredients

• 12 oz (340g) of penne pasta or pasta of choice
• 2 tablespoons olive oil
• 1 pound (450g) chicken breast, cut into 1-inch cubes
• 3 cloves garlic, minced
• 1/4 teaspoon red pepper flakes (optional)
• 1 cup (250g) ricotta cheese
• 1/2 cup (120ml) heavy cream
• 1/4 cup (60ml) chicken broth
• 1/2 cup (50g) grated Parmesan cheese
• 1 cup (150g) cherry tomatoes, halved
• 1 cup (30g) spinach leaves, roughly chopped
• Salt and pepper to taste
• 1 tablespoon fresh basil, chopped (optional)
• Zest of 1 lemon (optional)
