Beth’s Miracle Carrot Muffins – Cooking Aboard with Jill

Ingredients

• 1 1/3 cups sugar (I used turbinado)
• ¼ cup butter
• 2 oranges
• 1 cup raisins (dried cranberries work as well)
• 1 teaspoon each salt, cinnamon and ground allspice
• ¼ teaspoon ground cloves
• 1 cup each all-purpose and whole-wheat flour*
• 1 teaspoon each baking powder and baking soda
• 4-8 ounces cream cheese
