Ingredients

• 3 green apples, peeled and cut into 1 cm cubes
• 1½ tsp. mixed spice
• 1 tsp. vanilla essence
• ⅓ cup dried currants
• ½ cup water
• ½ cup caster sugar
• 1 cup roasted walnuts, chopped
• 1 tsp. cinnamon
• ¼ cup brown sugar
• 12 sheets phyllo pastry
• 125 gram unsalted butter, melted and cooled slightly
• 1 Tbsp. honey
• 2 tsp. icing sugar
