• 4 large eggs, separated
• 2 tbs. orange juice
• 3 tbs. unsalted butter, melted and cooled slightly
• 1/2 cup coconut sugar, divided
• 1 tsp. vanilla extract
• 1/2 tsp. cream of tartar
