Ingredients

• 200g British 5% fat lean pork mince
• 1 teaspoon ground coriander
• 1 teaspoon ground cumin
• 1 teaspoon garlic granules
• 8 small flour tortillas
• 2 teaspoons oil, or spray oil, for frying
• 8 smoked cheese slices, or 100g grated cheese, to serve
• 1 apple, cored, deseeded and grated
• ¼ white or red cabbage, finely shredded
• 3 spring onions, finely sliced
• 3 tablespoons light mayonnaise
• 1-2 teaspoons chipotle chili paste
• Juice of ½ lime
