Weeknight Italian Wedding Soup
A quick and easy weeknight version! *I love adding a lot of greens to my soup. If this is too much for you, you can reduce.
Ingredients
- Fresh dill
- Parmesan cheese
- 1 tablespoon olive oil
- 3 small carrots
- 1 small onion
- 2 bags baby kale or baby spinach
- 2 quarts chicken stock
- 2 stalks celery
- salt and pepper
- 1 cup orzo pasta
- 1 bag Rosina Foods Italian Style Meatballs
- 2 to 3 cloves garlic
