  • 2 Tbs. extra-virgin olive oil
  • 6 boneless, skinless chicken thighs
  • ½ cup dry white wine
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • ¼ cup tomato paste
  • 3 sprigs thyme
  • 1 bay leaf
  • 2 cups quartered radishes
  • 1 cup chicken stock, preferably homemade , plus more as needed
  • 1 tsp. kosher salt
  • freshly ground black pepper, to taste
