- 1 1/2 kg whole chicken
- Small knob soft butter
- For the stuffing
- 25g butter
- 1 onion, finely chopped
- 75g chorizo, chopped into 1cm dice
- 75g soft white breadcrumbs
- 2 tbsp chopped parsley
- 2 generous tsps chopped thyme
- For the gravy
- 350ml chicken stock
- 1 tsp thyme, leaves only
- To serve
- Mash or roast potatoes
- Seasonal vegetables
