Harvest Soup by Donal Skehan - Flahavan's

Ingredients

• 2 tbsp olive oil
• 1 onion, finely diced
• 2 stalks celery, diced
• 2 sprigs thyme
• 2 garlic cloves, finely chopped
• 1 carrot, sliced
• 1.5 litres vegetable stock
• 1 bay leaf
• 450 potatoes, peeled and diced
• 1 400g tin butter beans, drained and rinsed
• 100g Flahavan’s Organic Jumbo Oats
• 50g cavolo nero (Tuscan kale), hard stalks removed and roughly chopped
• Sea salt and freshly ground black pepper
