Ingredients

• 2 Tbsp of Olive Oil
• 1 lb of Italian Sausage, casing removed
• 2 Large or 4 Small Zucchini, diced
• 1 Large Yellow Onion, diced
• 4 Cloves of Garlic, minced
• 1 14.5 oz can of Diced Tomatoes
• 2 cups of Short Cut Pasta
• 5 cups of Vegetable Stock or any other stock of your choice
• 1 Tbsp of Italian Seasoning
• 1/4 cup of Freshly Grated Parmiggiano
• Salt and Pepper, to taste
