Stuffed Fish Cakes | Red Sun Farms

Ingredients

• 2 average-sized fillets of your favorite white flesh fish (halibut, haddock, or cod is ideal)
• ½ small diced red Sweetpeps mini pepper
• ½ small diced yellow Sweetpeps mini pepper
• 1 cup Panko bread crumbs
• 2 eggs
• ¼ cup finely chopped Italian parsley
• ¼ cup chopped chives for presentation
• Salt and pepper to taste
• 1/2 cup sour cream
• 1/2 cup mayonnaise
• ½ tsp Sriracha sauce or your favorite hot sauce
• A squeeze of ¼ lemon juice
