• 1 pound ground bison
• 1 pound ground pork
• 1 pound ground beef
• 1½ cups fresh breadcrumbs, the finer the better
• ½ cup half and half
• 2 large eggs
• 2 teaspoons kosher salt
• 1½ teaspoons freshly ground black pepper
• ½ teaspoon freshly grated nutmeg
