Ingredients

  • For the Brisket
  • 1/2 cup coarsely ground black pepper
  • 1/3 cup Kosher salt
  • 1 12-14lb full packer brisket, fat cap trimmed to 1/4" thickness
  • 3 chunks of a medium smoking wood, such as oak or hickory
  • For the Onion Straws
  • 2 large yellow onion, cut into thin slices
  • 1 1/2 cups buttermilk
  • 1 1/2 cups all purpose flour
  • 1/4 cup cornmeal
  • 2 tablespoons paprika
  • 1 1/2 teaspoons garlic powder
  • 1/2 teaspoon cayenne pepper
  • 2 to 3 cups canola oil
  • For the Sandwiches
  • 16 brioche rolls
  • 12 tablespoons butter, at room temperature
  • 2 cups barbecue sauce
  • 2 cups chile con queso, warmed
  • 1/2 cup pickled jalapeño slices
