Recipe: Cheese Ravioli from Carinthia

Ingredients

• 300 g coarse-grained flour / 2¼ cups
• 1 egg
• dash oil
• pinch salt
• water as needed
• 1 egg white for coating
• 100 g brown butter to pour over before serving
• 150 g peeled potatoes / 5 oz
• 300 g ow-fat farmer's cheese / 1 cup
• 2 tbsp diced onion
• 2 tbsp mixed, finely-chopped herbs (mint, chervil, parsley)
• 2 tbsp sour cream
• salt as needed
• butter to sweat the onions
