Ingredients

• 1 small red onion, finely chopped
• 1 clove garlic, finely chopped
• 1tsp ground cumin
• ¾tsp ground coriander
• 45g dried apricots, finely chopped
• 250g lamb mince
• ½ small bunch coriander, finely chopped
• 100g couscous
• ¼ cucumber, cut into small cubes
• ½ red pepper, deseeded and cut into small cubes
• 2tbsp Greek yogurt
• 1tsp lemon juice (plus a little extra)
• 2tsp finely chopped mint
• Salad leaves
• Cherry tomatoes
