Countryside Chicken, Mushroom and Spinach Meatloaf

Ingredients

• 1 lb ground chicken
• 1/4 cup of breadcrumbs / panko
• 1/2 cup spinach, finely chopped
• 1 tbsp lemon zest, julienned or grated
• 1 egg, beaten
• 1 tbsp fresh thyme
• 1 cup mushrooms, minced
• 1/2 cup onion, minced
• 2 cloves garlic, minced
• salt and pepper
• 1 tbsp butter or oil for sautéing
• 1/3 cup ketchup
• 1 tbsp brown sugar
• 1 tsp ground mustard
