Ingredients
- 2 or 3 beef marrow bones, about 3 inches long
- 2 pounds brisket, chuck, or other beef stew meat, cut into 2-inch cubes
- 4 garlic cloves, finely chopped
- 2 tablespoons vegetable oil
- 1 tablespoon white vinegar
- 2 tablespoons kosher salt
- 1 ¾ cups all-purpose flour, plus more as needed
- 1 large egg
- ½ cup water
- ½ teaspoon kosher salt
- 2 large yellow onions (about 1 pound), thinly sliced
- 6 garlic cloves, thinly sliced
- 2 teaspoons ground cinnamon
- 2 teaspoons ground cumin
- 1 teaspoon ground nutmeg
- ½ teaspoon sugar
- 1 tablespoon kosher salt
- ¼ teaspoon freshly ground black pepper
- 2 large russet potatoes, peeled and cut into quarters
- 4 to 6 large eggs
- About 5 cups water
