Ingredients

• 3 cups chopped California Giant strawberries
• 2½ cups sliced rhubarb (cut into ½ inch pieces)
• ⅔ cup granulated sugar (up to 1 cup, depending on desired sweetness)
• ¼ cup tapioca flour (or 3 tablespoons cornstarch)
• ¼ teaspoon fine sea salt
• 2 teaspoons orange juice
• ¼ teaspoon ground cinnamon
• ½ teaspoon vanilla extract
• 2½ cups unbleached all-purpose flour
• ¾ teaspoon fine sea salt
• 16 tablespoons very cold unsalted butter (chilled and cubed)
• 8–10 tablespoons ice water
• 1 tablespoon apple cider vinegar
• 1 large egg, beaten with 1 tablespoon milk (for crust)
