Ingredients

  • 4 Pork Country Style Ribs
  • 8 slice(s) Bacon
  • 2 cup(s) BBQ Sauce (use your favorite)
  • 1 cup(s) Beer (light bodied recommended)
  • 1 Tbsp Apple Cider Vinegar (plain white vinegar also works)
  • 1 Tbsp Yellow Mustard
  • Pork BBQ Rub (use your favorite)
  • Remove the Pork Country Style Ribs from the packaging and rub them all over with first yellow mustard and then with Pork BBQ Rub. The mustard helps the spice and bacon stick to the meat.
  • Set up your smoker (or grill) to cook the ribs as follow. Set to indirect heat cooking at 325˚F. Add a fruit wood chunk or chip like apple or cherry and a drip pan filled with water.
  • Lay the ribs out in an aluminum foil lined baking pan for easy clean up and place on the smoker or grill. Smoke the ribs for one hour at 325°F.
  • After the ribs have smoked for one hour, brush the outside of the ribs with the BBQ Beer Glaze and raise heat to 400°F. Cook for 30 minutes or until the pork reaches an internal temperature of 160°F.
  • Remove from smoker, let sit for five minutes and serve. Enjoy!
