Ingredients
- 3 lb Bone In Pork Country Style Ribs
- 1 Carrot (chopped)
- 1 stalk Celery (chopped)
- 1 Onion (chopped)
- 4 clove Garlic (minced)
- 2 1/2 cup Chicken Stock
- 1/4 cup Apple Cider Vinegar
- 3 Tbsp Vegetable Oil
- 2 Tbsp Tomato Paste
- 1 tsp Red Pepper Flakes
- 2 Bay Leaf
- Kosher Salt
- Black Pepper
- Preheat your oven to 350F.
- Season your Country Style Ribs with salt & pepper.
- Add vegetable oil to a large pan, and heat until hot. Once hot, brown the ribs on all sides. Once browned, remove the ribs, and place them in a Dutch Oven.
- Add the carrots, celery, onions, garlic and tomato paste to the same pan, and cook until vegetables are soft, stirring constantly.
- Deglaze (absorb the leftover pork solids) the pan by adding the apple cider vinegar and stirring until the drippings on the bottom of the pan are absorbed in the liquid.
- Add the chicken stock and bay leaves, and bring the mixture to a boil.
- Pour the boiling mixture over the Country Style Ribs in the Dutch Oven. Cover the Dutch Oven, and place in the preheated oven.
- Let cool and enjoy!
