Ingredients

• For the beets:
• 1 1/2 – 2 lbs. red beets, stems removed, scrubbed and patted dry
• 2 Tbsp. extra virgin olive oil
• 1 tsp. kosher salt
• 1/4 tsp. pepper
• For the dressing:
• 1 1/2 Tbsp. apple cider vinegar
• 1 1/2 Tbsp. Dijon mustard
• 3/4 tsp. kosher salt, plus more to taste
• 1/2 tsp. pepper
• 3 Tbsp. extra virgin olive oil
• 2 Tbsp. prepared horseradish, or more, if you’re feeling adventurous
• chopped chives, for garnish
