Quesadilla with Mussels

Ingredients

• 1 tomato, deseeded, diced
• 0,5 red onion, chopped
• 1 garlic clove, chopped
• 0,5 chilli pepper, seeds removed, finely chopped
• 0,5 tbsp finely chopped cilantro
• juice of half a lime
• salt and pepper
• 2 avocados, pitted and scooped out
• 0,5 white onion, finely chopped
• 1 tbsp finely chopped cilantro
• juice of one lime
• 2 tbsp extra virgin olive oil
• 600 g cooked mussel meat
• flour, for dusting
• 2 tsp paprika
• 2 tsp cumin
• 2 tsp garlic powder
• 20 g butter
• 8 tortillas
• 200 g cheddar, grated
• 2 spring onions, thinly sliced
• 1 jalapeño, sliced
• zest of one lime
• crème fraîche
