Virginia's Spicy Meatballs – Rolling Bones Barbecue

Ingredients

• 1 lb ground beef 80/20 or 70/30 meat/fat concentration
• 2 tablespoons Perpetual Beef
• 1 teaspoon paprika
• 1 teaspoon cayenne
• 1 tablespoon mustard powder
• 3 cloves garlic
• ½ a medium white onion sweated in a pan with some oil until translucent
• ¼ cup milk
• 2 egg yolks
• ¼ cup shredded pepper jack
• ¼ cup grated parmesan + more for finishing
• ¼ cup bread crumbs
• 2 tablespoons chopped flat leaf parsley
• 2 cups marinara sauce
• Basil for garnish
