Corn Chowder Gelson's

Ingredients

• 8 ears sweet corn, peeled, kernels cut off, cobs reserved
• 12 cups water
• 2 Tbsp unsalted butter
• 1 medium yellow onion, diced small
• 1 ½ lb yukon gold potatoes, diced small
• 2 cloves garlic, minced
• 1 medium shallot, minced
• 8 strips bacon
• 1 cup dry white wine
• 2 cups heavy cream
• Salt and pepper, to taste
• ½ tsp smoked paprika
• 2 tsp Tabasco
• 2 Tbsp chives, minced
• 1 cup crème fraîche
