• 6 beets, rinsed but not peeled
• 6 shallots, chopped
• 1 tbsp olive oil
• 1½ l vegetable or chicken stock
• ½ lemon, juice
• 2 tbsp sour cream or Greek yogurt
• salt and pepper to taste
• 100 ml sour cream or Greek yoghurt
• 100 g Apetina® 50% Less Fat Original White Cheese
• flat-leaf parsley, coarsely chopped
• A little ginger
• Fresh-baked bread
