Ingredients

• 1 tbsp olive oil
• 1 capsicum, chopped
• 1 onion, chopped
• 500 grams beef mince
• 1 tsp chilli powder, optional
• 1 tsp cumin
• ½ tsp smoked paprika
• Salt and pepper
• 8 large flour tortillas
• 375 grams enchilada sauce
• 4 slices Grandpa’s Bacon of your choice
• 2 cups shredded cheese, more for sprinkling on top
• 1 tomato, chopped
• 200 grams sour cream
• Italian flat-leaf parsley for garnish
