French onion pork casserole

Ingredients

• 2 tablespoon vegetable or olive oil
• 700 gram diced pork
• 8 baby or pickling onions, peeled
• 2 cloves garlic, crushed
• 2 celery sticks, coarsely chopped
• 2 medium carrots, chopped
• 35 gram sachet salt-reduced french onion soup mix
• 425 gram can diced tomatoes
• 1 1/2 cup salt-reduced chicken stock
• chopped flat-leaf parsley and mashed potato, to serve
