Ingredients

  • 2 large onions ( finely diced, about 4 cups)
  • 2 cups celery and celery leaves (diced )
  • ½ cup olive oil plus more for garnish
  • 8 garlic cloves (minced)
  • 2 tbsps dried ginger
  • 3 tsps black pepper
  • 4 tsps turmeric
  • 2 tsp toasted and ground cumin
  • 1-2 tsp dried red chile flakes
  • 2 (3-inch) piece cinnamon stick, ground, or 1/4 teaspoon ground cinnamon
  • 8 cups diced ripe tomato ( fresh or canned)
  • 2 T tomato paste
  • Salt
  • 4 cups red lentils, (rinsed)
  • 2 cup dried chickpeas ( soaked overnight)
  • 1/2 angel hair pasta or vermicelli (broken into 1-inch pieces or 6 T. uncooked white rice)
