Ingredients

• 2 rotisserie chickens
• 1/3 cup canola oil
• 1 onion, peeled and sliced
• 1 large carrot, peeled and sliced
• 1 celery stalk, sliced
• 2 cloves garlic, peeled and crushed
• 6 whole black peppercorns
• 4 whole cloves
• 2 litres water
• 300 g brown shimeiji mushrooms
• 100 g butter
• 1/3 cup white wine
• 3 T cornflour
• Sea salt salt and freshly ground black pepper, to taste
• 500 g puff pastry, thawed
• 3 T milk
• 1 free-range egg, beaten
