Ingredients

  • For the Xawaash Spice Blend (if making from scratch):
  • whole cumin seeds
  • whole coriander seeds
  • green cardamom pods
  • whole cloves
  • black peppercorns
  • ground turmeric (add after grinding whole spices)
  • ground ginger (optional)
  • Main Ingredients:
  • tbsp olive oil or ghee
  • 1 lb boneless, skinless chicken thighs or breast, cut into 1-inch pieces (or beef cubes, or a vegetarian alternative like chickpeas/lentils)
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 2 tbsp prepared xawaash spice blend (or homemade blend)
  • 1 cup basmati rice, rinsed thoroughly
  • 2 cups chicken or vegetable broth (or water)
  • 1 (14.5 oz) can diced tomatoes, undrained
  • X cup mixed vegetables (e.g., carrots, peas, bell peppers), chopped
  • Salt to taste
  • Fresh cilantro or parsley, chopped, for garnish
  • Optional: X green chili, sliced (for extra heat)
  • Notes on Ingredient Quality / Tips:
  • Spice Freshness: For the most vibrant flavor, use whole spices and toast them yourself before grinding. Store pre-made xawaash in an airtight container away from light and heat.
  • Rice Choice: Basmati rice is traditional and yields fluffy grains. Rinse it thoroughly until the water runs clear to prevent mushiness.
  • Protein: Chicken thighs stay moister and more flavorful than breast. For beef, opt for stewing cuts and allow for longer cooking times.
  • Vegetables: Don't be afraid to experiment with your favorite additions like potatoes, spinach, or zucchini.
