Ingredients

  • 1 x 500 g (1lb 2oz) canned young, green jackfruit in brine, rinsed
  • 2 tbsp coconut oil
  • 2 tsp all-purpose seasoning
  • 1 2.5cm (1in) piece of fresh root ginger, peeled and minced, or 1 tsp ground ginger
  • 5 tbsp medium masala curry paste or 2 tbsp curry powder
  • 1 x 400ml (13.5 fl oz) can coconut milk
  • 1 pinch light soft brown sugar (optional)
  • 1.5 peppers (mix of colours), deseeded and sliced or chopped
  • 0.5 small onion, finely chopped
  • 5 spring onions (scallions), thinly sliced
  • 1 Scotch bonnet pepper, whole
  • 1 pinch sea salt
  • 1 pinch freshly ground black pepper
  • 1 handful parsley or coriander (cilantro), to garnish
