Ingredients

• 1 small head cauliflower, florets
• 1-2 tablespoons Fustini's Chipotle olive oil
• salt and pepper
• cilantro for garnish
• 1 poblano pepper
• 1 tablespoon Fustini's Chipotle olive oil
• 1/2 sweet onion, diced
• 2 garlic cloves, minced
• 1 1/2 cups half & half
• 1 tablespoon cornstarch
• 8 ounces sharp white cheddar, grated
• 8 ounces Monterey Jack, grated
