Ingredients: 270g floury potatoes, peeled and cubed; Big pinch salt; 1 cup warm milk; 550g bread flour; 10g instant yeast; 1 tsp salt; 2 tbsp sugar; 1 egg; 2 egg yolks; 100g sultanas

Serves 6 1 Place potatoes in a pot, cover with cold water, add a pinch of salt and cook until soft. Drain, then mash. Add warm milk, stir and set aside.
