Chicken Bombs | Australian Onions

Ingredients

• 1 white onion, finely chopped
• 2 tsp olive oil
• 100 g frozen spinach
• 1 small clove garlic, crushed
• ¼ tsp finely grated lemon rind
• ⅔ cup cream cheese
• ¼ cup grated parmesan
• Salt and cracked black pepper
• 3 chicken breast fillets, trimmed
• Plain flour, for dusting
• 2 eggs, lightly beaten
• 1 ½ cups panko breadcrumbs
• Toothpicks required to assemble for oven
