Ingredients
- 2 tablespoons olive oil
- 8 chicken pieces (thighs and/or drumsticks)
- 1 medium onion – chopped
- 2 cloves of garlic – crushed
- 140g chorizo – diced quite small
- 100ml white wine
- 2 x 400g cans chopped tomatoes
- 100ml chicken stock – freshly prepared or from a stock cube
- 1/4 – 1/2 teaspoon of sugar
- 700g peeled potatoes – chopped into chunks
- 70g-90g pitted black olives
- salt
- freshly ground black pepper
