Roasted Fennel and Potato Soup

Ingredients

• 2 fennel bulbs (trimmed and coarsely chopped)
• 1 small onion (coarsely chopped)
• 2 tbsp olive oil
• 2 garlic cloves
• 1 leek ((white and pale green parts only), coarsely chopped)
• 6 cups chicken stock
• 1 lb russet potatoes (peeled and cut into large chunks)
• 1 cup heavy cream
• salt and freshly ground black pepper
• 1 bunch fresh chives (chopped (1/4 cup))
