Ingredients

• 2 ears corn, shucked
• 3 oz. pancetta, cut into ¼-inch dice
• 5 Tbsp. olive oil, divided
• 4 oz. cremini mushrooms, halved or quartered if large
• Salt and black pepper
• 2 steelhead trout fillets, skin on (6 oz. each ), patted dry and seasoned with salt and black pepper
• 1 Tbsp. white wine vinegar
• 1 Tbsp. chopped fresh chives
• 1 tsp. minced fresh garlic
• ½ tsp. Dijon mustard
• ¼ tsp. honey
• 3 cups chopped curly endive
• ½ oz. fontina, cut into sticks
