Hatch Chile Chicken Enchiladas Verde

Ingredients

• 10oz tomatillos, husked and scrubbed
• 1 Hatch or Anaheim green chile
• 1 jalapeño (optional; omit for a more mild sauce)
• 3 cloves garlic (unpeeled)
• 3/4 cup cilantro leaves and thin stems
• 1/2 cup coarsely chopped white onion
• 1/3 cup chicken broth or water
• 1/3 cup sour cream
• 1 tsp ground cumin
• 1 tsp kosher salt
• 3 tbsp extra virgin olive oil
• 8 La Tortilla Factory Handmade-Style Hatch Green Chile tortillas, or any corn tortillas
• 3 Zupan’s chicken sausages, casings removed
• 1/2 cup diced white onion
• 8oz Oaxaca cheese, shredded
• 1/2 cup crumbled cotija cheese
• 1 large Oregon Star tomato, or other ripe red tomato, diced
• 2 green onions, thinly sliced
• 3 tbsp coarsely chopped fresh cilantro
