Scalloped Potatoes - Chew Nibble Nosh

Ingredients

• 2 Tbsp. butter
• 1 medium onion, chopped
• 2 garlic cloves, minced
• 1 Tbsp. chopped fresh thyme leaves
• 1 1/4 tsp. salt
• 1/4 tsp. ground black pepper
• 2 1/2 lbs. russet potatoes, peeled and sliced 1/8 inch thick (I used 4 potatoes this time)
• 1 cup low-sodium chicken broth
• 1 cup heavy cream
• 2 bay leaves
• 1 cup shredded cheddar cheese
